The 2 heart hunts (and some of the 3+ lung hunts) are a little tricky. Basically its about positioning. After the first shot, you have a small amount of time to make the second before the prey starts to run. With the standard guns and their slow reload time, you have to be fast.

    Tips:
    - If possible align the two animals so that you have to move your crosshair as little as possible after the first kill
    - Invest in the infrared upgrade, it is relatively cheap so go for at least 8 seconds and it should last for 2 shots unless you really suck at aiming.
    - locate the hearts of the animals before the first shot with a quick infrared look and then move your crosshair over the heart before zooming in and activating infrared, that helps
    - if one prey has not moved for a long time, let it move before firing the first shot, you want targets standing still when you shoot their hearts for obvious reasons
    - (if you have to hit 3 lungs, you do not have to activate infrared for the shot, look where the lung of the animal is located before the first shot, it will be located at the same place for your targets, for example a little left and up from the front legs, shoot the first two animals while they stand still, locate the third animal running away and anticipate where it will be running. Aim in "lung-height" and wait until the animal runs into your crosshair and shoot)

If it is not enough (just in case, you really cannot do it):
    - restart the mission in hope for better prey alignment
    - use a energy drink to slow time
    - use a mating call after finishing the hunt with one heart-shot
