Chef Duels - resets and venues

I’m relatively new, and trying to understand the Chef Duel rank weekly reset... does it subtract 100 from your previous week’s score? Or start you over at the next tier down?

Also, I’ve seen people mention dueling in specific venues - is there a way to choose what venue the duel will be? Mine’s always been random (or, at least, I haven’t been able to choose).

It varies, based on what level you achieve each week. At 1100, you usually get bounced down to 1050. At 1200, you get bounced to 1100. Above that, you get bounced back to 1200.

I find that you can sort of predict the venue for your first duel: when you log in, slide to the restaurant you would want to duel in, and then enter Duels. Often, but not always, the random venue will turn out to be the venue you were hovering over on the main screen.
