I find the information provided for game play and features are severely lacking and it's very frustrating! From what I can gather the slow feet prank is automatic unless you select "fast feet" before the duel. Which means you must either have the Colossal Calzone prepped to use or purchase with gold.
"Pranks" are temporary handicaps that occur in the Chef Arena duel battles. At this time, these are randomly activated and cannot be averted by any means from the player(s). Each battle has its own prank that will occur randomly during the battle - and this goes for both players.
This feature is expected to have great improvement over the next several updates with more pranks added, your feedback in this thread will be the prime catalyst of that improvement!
Gordon Ramsay Dash is still very new and being constantly worked on and enhanced, but that is currently designed behavior for now regarding "pranks". We are looking into how this can be better conveyed to our players.

Pranks happen on each side of the duel, use fast feet to remove it and it won't effect you
