Why didn't I get to pick what I wanted to be at the start of the game?

So when I was reading the app description, it said I could be a actor, fashion icon, or model. I wanted to be an actor, but I got stuck being a model. Why?

I don't recall anyone being able to pick their career at the beginning of the game. I think as you progress you get the chance to be all 3
