What do the colors and leaves mean on the episode overview?

I've been trying to figure out for a couple of days what this means. When I pass a level with less than five stars, the stars fill in and the background color stays the same.

When I get five stars, the stars fill in and to either side of them there are fancy silver wing-looking things, and the background color stays the same.

And then sometimes, the background turns gold, and the silver wings turn gold.

Anybody know what that's about? I wasn't paying attention at first and now I haven't managed to get the whole thing to turn gold since!

If you serve all customers is when the wing looking things appear.

If you get five stars on a level, the background turns gold and silver wings appear. If you get five stars AND serve all customers, then the wings turn silver as well. If you serve all customers but do not get five stars, no wings appear.
