I heard that you should avoid opening the Chef Arena if you don't have regular access to a ton of gold & coin. Is this true? What's the value of opening the Chef Arena? Thanks!

It's partially true. The chef arena's upgrades are really expensive, and there are a ton of them. Unless you have like a thousand extra gold to spend, I wouldn't bother opening the arena. You can get tickets, a limited amount of gold, and other prizes from the arena, but I wouldn't consider it to be worth it unless you've 5 starred all the other venues and have nothing to spend gold on.

I opened mine before I read warnings on the forum. So far it hasn't shown up in duels, luckily Does anyone know what stage has to be beaten before it starts to appear in duels?
