Rewards for completing 3* or 5* rating are set and doesn't change. They are different in various venues, though. So it's just the matter of the differences between them. For me videos sometimes doesn't work.

Are you sure you are serving ALL clients before Happy Hour (if present) jumps in? From my perspective they always appear but sometimes I miss few clients and that's why I end up with 1 or none VIPs served. There are always 2 VIPs per dish. Notice that when you use prep total customer count increases by 2.

Since I started playing the game (could be around a year) there was no coins gained from duels (and Chef Arena). Gold bars - sure, but no coins. But I'm not sure if that's a bug or not.
